Pasta with sardines

Ingredients

  • 1 lb of spaghetti
  • 1 tin of sardines in olive oil
  • 3 cloves of garlic, minced
  • 1/4 c of diced onion
  • 1/4 c of chopped parsley
  • 1/4 c of white wine
  • 2 tablespoons of olive oil
  • salt/pepper
  • 1 teaspoon of Calabrian chili pepper (optional)

Directions

  1. Cook the pasta according to the package instructions until it is al dente. Drain and set aside.
  2. In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until it is translucent.
  3. Add the minced garlic and cook for another minute.
  4. Drain the sardines, and flake the meat with a fork.
  5. Add the sardines, white wine, and chopped parsley to the pan and cook for 2-3 minutes. Season with salt and pepper to taste. Optionally, add the Calabrian chili pepper for heat.
  6. Add the cooked pasta to the pan and toss well with the sardine mixture, until the pasta is well coated.

How to make a sardine pasta that will blow your mind.

This pasta dish is quite easy to prepare, yet delicious and full of flavors. Sardines, white wine and parsley in combination with olive oil make a great sauce, also the acidity of white wine balances the oilyness of sardines. It is a great way to incorporate some extra protein and omega-3 fatty acids into your diet.

There are a ton of ways to incorporate sardines into pasta. For this recipe, I am going to opt for an easier preparation, but if you want to be ambitious, try making a traditional Sicilian sardine pasta such as this one by the NYT.
